Homemade Chicken Noodle Soup



I swear I make this soup at least once a week in the Fall & Winter months...it's easily our favorite!

It's so simple and so delicious that I thought I would share my recipe here.

Ingredients

1 pre-cooked rotisserie chicken from the grocery store, meat pulled off and chopped
1 small onion, chopped
3-4 stalks of celery chopped (leaves included)
3-4 carrots, chopped (washed but not peeled - the peel has all the vitamins!)
1 tablespoon butter (I use Smart Butter) or olive oil
8 (or so) cups of chicken stalk
1 bag of egg noodles
Salt and pepper
1-2 cloves of garlic, chopped
Spices of choice (I typically use oregano, thyme, sage, onion powder, celery salt, etc.)

Method

Find your biggest pot and get it nice and hot on the stove, add your butter or olive oil.
Sautee your onion, carrots & celery.
Season with salt and pepper.
Stir.
Add your other spices of choice.
Stir.
Add your garlic cloves.
Pour in your chicken stalk.
Lastly add your chicken pieces and egg noodles.
Cover and bring to a rolling boil.
Once boiling, turn down your pot to a simmer.
Once you know your noodles are cooked serve it up nice and hot and enjoy!
